The summer forest offers a variety of edible plants that can be used to prepare simple but creative dishes that everyone will enjoy.
These plants were the focus of our “De Bësch schmaachen” activity on Saturday 10 August. 16 people went with herbalist Christiane Laures to Ellergronn to look for edible plants – and found them! After a walk through the forests of one of Luxembourg’s oldest nature reserves, the herbalist showed the participants a number of other plants that can be found, or will soon be found, in the forests of the Minett Biosphere.
The participants then prepared a complete menu from the plants they had found, which was eaten in a relaxed atmosphere on the terrace of the Ellergronn Nature Conservation Centre.

The summer menu
The aperitif was a small vodka tonic made from meadow hogweed, accompanied by a baguette with wild herb butter and edible flowers. This was followed by a Mediterranean fennel salad with blackberries and meadow hogweed. The main course was a wild herb and spelt dumpling with garlic mustard seeds and herb aioli and for dessert a cassata with rowanberry chutney.

The next date for a Nature Lab workshop at the Minett Biosphere is 7 September, when nature studies with artist Ann-Kathrin Wirth will be offered in Ellergronn. More information about this workshop can be found here.
